Chef Denia’s Bannock Recipe

Hi Readers!

In the January/February issue of Chirp magazine, we showed you how to make berry jam! Dene Chef Denia Baltzer helped us write this recipe and since she loves eating berry jam on fresh Bannock, she wanted to share that recipe with you too! We hope you like it!

Chef Denia’s Bannock Recipe

You’ll need:

• 2 cups all purpose flour
• 2 tsp. baking soda
• 2 tsp. salt
• 3 tbsp. lard, melted (or melted butter)
• 3/4 cups warm water
• bowl
• wooden spoon
• round cookie cutter or drinking glass.
• baking sheet covered in parchment

How to make it:

1. Heat the oven to 400 degrees.
2. Put the flour, baking soda, and salt in a bowl. Stir together and make a well in the centre.
3. Pour the lard or butter and warm water into the well.
4. Use a wooden spoon to mix until a dough forms.
5. Knead the dough with your hands about 8-10 times then press it out on a flat surface until it is about 2 cm thick.
6. Use a cookie cutter or upside-down glass to cut the dough into circles.
7. Place the circles onto the lined baking sheet and bake for about 20 minutes. Yum!

Hot Chocolate 4 Ways!

Hi Owlkids Family,

Looking for a tasty treat to get you through the chilly season? Make the hot chocolate recipe below and then customize it with one of these fun suggestions!

HOT CHOCOLATE RECIPE:

You’ll need (makes two servings):

• 1/2 cup sugar
• 1/3 cup unsweetened cocoa powder
• pinch of salt
• 1/3 cup boiling water
• 3 cups milk or alternative
• 1 cup cream or full fat coconut milk
• 1 tsp. vanilla extract
• small pot
• whisk

How to Make It:

1. Whisk the sugar, cocoa, and salt together in a pot.
2. Add the boiling water and whisk until the sugar is dissolved.
3. Boil the mixture over medium heat for two minutes, whisking constantly.
4. Add the milk and whisk for another two minutes.
5. Remove from heat and add the cream and vanilla and pour into mugs. Let cool.
