Make Food Colouring With Veggies!

In the May issue of chickaDEE, we showed you how to make a blue R2-D2 Smoothie! For this recipe you can use store-bought blue food colouring or you can try making your own all-natural food colouring using red cabbage. How does red cabbage turn blue, you might ask? Try it and see!
You’ll need:
- one red cabbage
- water
- baking soda
- Chop up the cabbage and put it into a large pot.
- Add enough water to cover the cabbage and boil for 20 minutes.
- Strain the water into a glass jar. This water will become your food colouring.
- Stir in 1/8 tsp. of baking soda. Add more baking soda in 1/8 tsp. measurements until the mixture turns blue. Do not add more than 1/2 tsp. or the food colouring will taste metallic. (If the mixture turns too green try adding a tiny bit of vinegar to bring it back to blue.)
**TIP: Use the leftover cabbage to make coleslaw or soup!
