Pumpkin Pancakes

If you’re looking for a fun pumpkin recipe, try these delicious and easy-to-make pumpkin pancakes! They are the perfect fall snack!
You’ll Need:
- 300 mL (1 1/4 cup) flour
- 60 mL (1/4 cup) sugar
- 10 mL (2 tsp.) baking powder
- 2.5 mL (1/2 tsp.) cinnamon
- 1.2 mL (1/4 tsp.) nutmeg
- 250 mL (1 cup) milk
- 125 mL (1/2 cup) pure pumpkin puree
- 1 egg, beaten
- 15 mL (1 tbsp.) oil
How to Make:
- Stir flour, sugar, baking powder, cinnamon, and nutmeg together in a bowl.
- Whisk milk, pumpkin, egg, and oil in a separate bowl.
- Pour the liquids into the flour mixture. Stir until you have a batter.
- Drop a big spoonful of batter onto a lightly oiled pan over medium heat.
- Cook until bubbles form and the edges dry out a bit.
- Flip the pancake over and cook the other side for about one minute.
- Add your favourite toppings, like butter, syrup, and pepitas, and enjoy!
